In honor of National Watermelon Day and the start of this fantastic August, we’re excited to share 5 of our favorite recipes. There’s a little something for your favorite little people and of course, for mom. Make sure you add watermelon to your weekly shopping list!

Ingredients
  1. 4 cups cubed seeded watermelon
  2. 2 tablespoons lemon juice
  3. 1 tablespoon chopped fresh mint
  4. 1 tablespoon honey
Instructions
  1. Blend watermelon, lemon juice, mint, and honey in a blender until smooth.
  2. Refrigerate 2 hours before serving.

Ingredients
  1. 1 box Near East rosemary & olive oil quinoa blend
  2. 2 cups cubed watermelon 1 small package feta cheese crumbles
Instructions
  1. Boil water as directed on quinoa package.
  2. Add quinoa blend. After quinoa has cooked, let cool (or refrigerate for quicker cooling process). Add watermelon and feta cheese.
  3. Mix together and serve.

Ingredients
  1. 8 slices watermelon
  2. 4 tbsp honey
  3. 1 tsp salt
  4. 1 tsp pepper
  5. ¼ cup soy sauce
  6. ¼ cup brown sugar
  7. 1 ½ lbs pork tenderloin
Instructions
  1. Mix 2 tbsp honey, soy sauce, brown sugar, and salt and pepper.
  2. Pour over pork tenderloin in a spill proof bag for at least 1-2 hours prior to grilling to marinate. Lightly salt watermelon wedges on both sides.
  3. Let the wedges stand on their edges over a sink or pan to drain.
  4. Rinse each piece under cold water.
  5. Gently but firmly press each piece between two folded paper towels to remove excess water. Once ready to grill, utilize the remaining honey to brush over watermelon on both sides.
  6. Grill pork 12 to 15 minutes, turning every 1-2 minutes.
  7. Grill watermelon until grill marks are formed and the melon is lightly softened, about 5 minutes.

Ingredients
  1. ½ tsp lemon, zest
  2. ½ cup lemon juice, fresh
  3. 5 cups watermelon
  4. 12 oz vanilla wafers, round
  5. ½ cup 2% milk
  6. 6 tbsp butter, unsalted
  7. ¼ cup confectioners’ sugar, or 1 cup whipped cream
  8. ½ cup sugar
  9. 1 oz gelatin, unflavored
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a 13x9 in. pan with foil, leaving a 2 in. overhang.
  3. Spray with cooking spray. Mix together melted butter and finely ground wafers.
  4. Add 2 tablespoons water. Press mixture into bottom of pan to form crust.
  5. Bake for 20 minutes and allow to cool.
  6. Using a strainer, set aside 2 cups of watermelon juice in a small bowl.
  7. In a large bowl, combine remaining 3 cups watermelon juice with lemon zest, lemon juice, sugar, and milk.
  8. Sprinkle the gelatin over the reserved 2 cups of watermelon juice.
  9. Allow to sit for 2 minutes so that gelatin can dissolve and begin to absorb liquid.
  10. Heat gelatin in the microwave for 2 minutes on high, or heat gently in a small pot over low heat on the stove top, until the gelatin has completely melted into the juice and the liquid is smooth.
  11. Add the watermelon juice with the melted gelatin to the large bowl mixture.
  12. Stir to combine.
  13. Carefully, pour the mixture over the prepared crust and place in the freezer for approximately 2 hours or until the mixture is firm.
  14. When ready to serve, cut into squares and sprinkle with confectioners’ sugar or whipped cream.

  2. 2 tbsp lime juice
  3. 2 tbsp honey
  4. 1 cup water
  5. 1 cup watermelon vodka
  6. Fresh mint leaves
  7. Sour apple pucker
Instructions
  1. Blend watermelon, lime juice, honey, and water until pureed.
  2. Pour through fine mesh strainer to remove pulp and seeds.
  3. Add vodka and stir to combine.
  4. Pour over ice and garnish with extra watermelon and mint leaves.
For layering
  1. Fill glass with ice and pour sour apple pucker until glass is ¼ full.
  2. Slowly pour watermelon mixture over pucker and mixture will float on top.
  3. Garnish with watermelon slice and mint leaves.

    I love your watermelon recipes, I think that if I gave my kids the recipe with the vodka things would have turned out differently for all of us, especially coming from a strict southern baptist home ha ha.
